Apple Pumpkin Soup with Turmeric
- 2 cups red onions, diced
- 4 garlic cloves, minced
- 2 cup of pumpkin, diced
- 1 cup of chopped apples
- 2 cups filtered water
- 1 T ground turmeric
- Salt and pepper to taste
- 2 red chilies (omit if you don't want spicy)
- 2 T coconut cream for mixing
- Fresh coriander, chopped, for garnishing
1.Heat up a little coconut oil in a large skillet over medium heat. Sauté the onions and garlic for 3 minutes until the onions are translucent and the garlic is fragrant.
2.Add the chopped pumpkin and apples and sauté for 5 minutes, then add water, red chilies and turmeric.
3.Bring the soup to a boil, then turn the heat down to low. Let everything simmer for 20-30 minutes until the apples and pumpkin are soft.
4.Remove from heat and let it cool before processing the ingredients in a blender (you may need to do this in batches depending on the size of your blender). Add salt and pepper to taste.
5. Pour the soup evenly into a bowl, mix in one tablespoon of coconut cream , and sprinkle with fresh chopped coriander
top tips: I use a hand blender and blend the soup while it's still in the pot to save time and cleaning up.
