COCONUT MILK DAIRY-FREE YOGHURT (makes 6 cups)
Ensure all equipments are clean and sterilised
3 (13 oz) cans full-fat coconut milk
1/8 teaspoon stevia liquid or powder (or to taste)
1 vanilla bean or 1/2 teaspoon of vanilla liquid or powder (to taste)
How to make:
Place all ingredients into a pot and turn the heat on to boil. Ensure it doesnt over boil. Once it reaches boiling, turn off the heat.
Now whisk in:
1 tablespoon and 1 teaspoon of gelatin (I use great lakes gelatin) or 1.5 teaspoons of agar agar powder (already dissolved in 1/2 cup boiling water)
Put this mixture into a bowl or container and place the container into a larger container with cold water (to help cool it down quickly). If using agar powder, skip this step and let it cool on its own to prevent going lumpy.
When it's cooled down to room temperature and no longer feels hot, add 1 probiotic capsule e.g. Mercola probiotics or Renew Life Ultimate Flora (around 30 billion or more bacterias per capsules). Mix in gently
Place mixture into a yoghurt maker. If you don't have a yoghurt maker, place mixture into small jars and keep it warm overnight until it solidifies (I've kept it on low heat in the oven - not economical ! ). It's best in a yoghurt maker which is cheap and easy to buy. Once it's fermented an turned into yoghurt, refrigerate until cold and it's ready to eat.
